Happy Thanksgiving! If you're anything like me, you wait until the last minute to decide on a recipe when entertaining or bringing food to a party. If that sounds like you, you're in luck!
I have 2 great appetizer recipes that each require only three ingredients. Enjoy!
Roasted Butternut Squash Crostini
-Goat Cheese Spread
Preheat oven to 400 degrees F. Peel and slice 1 butternut squash. Cut slices into 1/2" cubes and toss in olive oil. Lay tin foil on a baking sheet and add squash with salt, pepper, and thyme. Cook for 10-13 mins. or until soft and let cool.
Slice the baguette and spread evenly with goat cheese. Top with 2-3 cubes of roasted butternut squash and enjoy!
Cranberry Goat Cheese Pastries
- Puff pastry cups/circles
-1 can of cranberry sauce
- Goat cheese crumbles
Bake puff pastry according to directions. If you are using puff pastry sheets, roll out on a floured surface and use a biscuit cutter (or the lid to a mason jar) to make circles. Bake until golden and puffy.
Using a tablespoon, place a spoonful of the cranberry sauce on each cooled puff pastry circle. sprinkle with goat cheese crumbles and serve!
