One thing that I love about cooking is that you can create so many different dishes with only a few simple ingredients. Take this stew for instance. You can make it in less than an hour and with only a few items, it's perfect for lunch or dinner!
1 tsp salt
1 tsp black pepper
1/2 tsp thyme
1/2 cup vegetable stock
2 handfuls of fresh spinach leaves
1/3 cup olive oil
1 white onion, diced
3 cloves of garlic, chopped
2 roma tomatoes, chopped
1 can of white beans (great northern, cannellini, etc.)
First, heat oil on medium heat in a stock pot/dutch oven until shiny. Add diced onions.
Cook onions, stirring occasionally about 3 minutes. Add garlic. Cook stirring occasionally for about 3 more minutes.
Add tomatoes, salt, pepper, and thyme. Cook about 5 minutes or until ingredients are soft. Continue to occasionally stir to prevent sticking/burning.
Add beans and vegetable stock. Lower heat and cover pot. Simmer for about 10 minutes, stirring occasionally.
Add spinach. Cover the pot and cook until spinach leaves have wilted. (About 5 more minutes.)
Serve with a sprinkle of shaved parmesan cheese and a piece of crusty bread. Enjoy!
