During a trip to Nepal, I was able to try naan, a staple flatbread served often, in many different ways. My favorite was naan with garlic and cheese! When I got back to the States, I wanted to recreate it as a pizza. I make this often as a side dish for soup, or as an appetizer.
Try this for your next get together! It makes the perfect party dish!
2 plum tomatoes, sliced
handful basil leaves, cut in strips
Black pepper, to taste
2 loaves of naan
2 small cloves garlic
½ cup shredded mozzarella
Preheat oven to 350 degrees. Put both loaves of naan on a baking sheet. Dice garlic cloves and sprinkle evenly on both loaves. Put mozzarella, tomato slices, and basil leaves on both pizzas. Sprinkle with black pepper.
Bake for 5-7 minutes, until cheese melts. Serves 4.
I have tried this with fresh mozzarella, but because that cheese is so wet, it made the naan soggy and did not crisp up in the oven, so I suggest buying shredded!
Feel free to experiment with different ingredients, such as spinach, mushrooms, pre-cooked sausage, and spices!
