2 T whole grain mustard
4 T unsalted butter, diced
1 lemon, halved
2 T chives, sliced thin
4 six-ounce Salmon filets
Sea salt and Pepper
2 T vegetable oil
1 T fresh ginger, minced or grated
2 T honey
Season the salmon filets with salt and pepper just before cooking
Heat oil on medium-high heat. Place salmon presentation side down.
Cook until salmon is evenly browned, about 3 minutes.
Flip and cook until salmon is browned and cooked through*
Remove from pan.
Add ginger, mustard, and honey to pan and cook until ginger is softened. Reduce to low heat.
Whisk in butter gradually.
Season to taste with salt and pepper and lemon juice. Stir in chives.
Pour glaze over salmon and enjoy! Goes great with garlic mashed potatoes and broccoli or rice!
*a general rule for fish: 8 minutes cook time per every inch of fish thickness
