Happy New Year! One of the most popular New Year's resolutions is to be healthier or to lose weight. For those of you that have these goals, we have just the post for you! Today, we're sharing 5 great recipes that are also healthy and easy to make!
First up, salad! I know that just the word can be a turn-off. It seems bland and dull, but you can make a salad really tasty! Just chop and toss the following ingredients with a light dressing or combo of oil + vinegar:
Another great food to try out in 2018 is a vegan twist on a classic...mac and cheese! We LOVE this "cheese" sauce recipe from Oh She Glows. Boil some whole wheat or gluten free pasta shells and add the sauce. Delish!
Green smoothies are another excellent healthy treat. The color can turn some people away, because they might think the greens make it bitter or be lacking in flavor. Not so! The frozen banana and pineapple/mango sweeten it up and it is the best breakfast or afternoon treat.
Blend 2 handfuls of spinach or kale with a frozen banana and come water. Then add frozen fruit (we love pineapple and banana) and 1/4 of a sliced cucumber. Enjoy! You can also check out our recipe for the Lucky Green Smoothie!
Another recipe you could try is Roasted Red Pepper + Mango Cous Cous with grilled chicken. If you're not a fan of cous cous you could add brown rice and throw a few more of your favorite grilled veggies to the mix.
Finally, soups and stews are perfect for the winter months. Broth based (not cream!) are healthier options, especially when they're loaded with veggies and beans! You get all the vitamins and protein and iron in the soups, especially this simple rustic bean stew.
In addition to these recipes for snacks, meals, and side dishes you should also have chopped veggies and fruit in the fridge for snacking! Cutting out soda and sugary energy drinks is also a huge step in getting healthier, too.
