This recipe for lemon hummus is one to die for! It's perfect to bring as a dish to a party or to pair up with sliced veggies and pita bread. You'll be eating it by the spoonful!
- 1/4 tsp sea salt
- 2 TBS water
- 1 TBS lemon juice
- Chili powder for garnish
- 3 TBS Olive Oil
- 1 can (15 oz.) Garbanzo Beans
- 1 clove of minced garli
- 3/4 tsp cumin
You'll put all the ingredients except for the chili powder into a food processor and blend on low or 1st speed. After about 45 seconds, check to make sure the puree is smooth. If you notice chunks of garbanzo beans or garlic still in the mix, pulse 4 or 5 times. If the mixture looks a little dry, add a splash of water and pulse again.
Spoon into a pretty dish and lightly dust with chili powder, not too much! In addition you could zest a lemon or drizzle with more olive oil, whatever your tastebuds desire!
This hummus is perfect to serve at a Christmas or New Year's party, when entertaining, or just to make for a yummy snack! It's healthy too so you won't have to feel bad about taking an extra spoonful! Serve with crackers or veggies.
